Super Sticky Satay Ribs
I love ribs, I have to admit! They aren’t a knife and fork kind of meal as much as a all out war on cleanliness. It’s just good messy fun! They are so easy to cook, broil, bake or BBQ. Let’s not even go into mentioning how versatile they are! Whether you’re a beef bloke or a pork person it’s easy to see why these are a fan favourite. Quick meal, or entertaining family and friends let’s get you started on rustling up something a bit different that will not only blow your taste buds straight out of your mouth, but most importantly, let’s make you the daddy of the kitchen!
What’s in it?
(This is set up per portion so multiply ingredients by racks of ribs you’re using)
1 rack of ribs (pork or beef dealers choice!)
4 heaped tablespoons of peanut butter
1 cup of honey
Hand full of walnuts (whole or crushed, not ground)
3 tsp of siracha
1 tsp of mustard
2 dashes of lime juice (1 tsp)
1 cup of evaporated milk
1 pinch of salt, pepper, and paprika
1 dash Worchester sauce
2 tsp of hot sauce
1 hand full of brown sugar
1 pinch of rosemary
2 cups of water
What’s next?
Grab a mixing bowl and add in your peanut butter, honey, siracha, mustard, lime juice, evaporated milk, salt, pepper, Worchester and hot sauce. Give a good stir until it becomes one fluid mixture, you want it to be nice and thick so that it really sticks to the ribs. Now you have a couple of options depending on how you want to cook the ribs, but my personal choice would be to oven roast the ribs if you want to finish on a BBQ that also works! Grab a large roasting tray and place your ribs inside, pour your mixture over the ribs. Make sure you rotate the ribs and cover all the meat and the bone so that the flavours really sink in. sprinkle your rosemary and crushed walnuts over the top to give a good covering. This will add a little crunch to your sticky ribs. Important trick before you do anything else is to add water into the tray. I said 2 cups of water but the trick here is to basically have around 1 -2 cm of water in the tray to keep the mixture moist and help with the cooking process. Cook on a medium heat around 400 on electric oven for around 45 mins to an hour. Make sure you slice into the ribs to make sure that there is no blood and the meat is cooked all the way through.
