Blake Floyd: Anyone posting on a site for dads should know the difference between grilling and BBQ.

That being said the best is pork butt. Smoked low and slow for 12-15 hours

Beth Booyens: National past time in South Africa, a public holiday entirely dedicated to it. We call it a braai. Wood fire flames to cook any kind of meat your heart desires. We don’t do sausages, we do boerewors. No hotdogs for us, we call them wors rolls . kebabs are for foreigners, we call ours sosaties.

There’s grilling and smoking, and they get lumped together (see what I did there?)

In all seriousness a Chuck eye steak is amazing, followed closely by my new favorite, smoked salmon!

Terrence McNamara: Pork shoulder with a mustard and dry rub. Split it in thirds and you greatly increase your smoke ring area, which is the best part. You also cut your cooking time down by hours when your chunks of meat are smaller.

Applewood is key. Hickory alone doesn’t give you a sweet enough flavor, and mesquite tastes like the Southwest. Not what you’re looking for in barbecue.

Leonel Lòpez: Split leg quarters seasoned, marinated fajitas, Eckrich sausage and cream cheese filled bacon wrapped jalapeños.

Loki Einarsson: Rump skewers with capsicum, cherry tomatoes, mushroom and pickled gherkin and glazed with honey soy and Chilli… trust me… they good!

Chris Wolf: Pork butt for actual bbq… burgers for grilling. Two very different things.

Jonathon Harvey: It’s an odd one but I really like sweet chilli king prawns on the bbq.

Hikurangi Davies: marinated chicken nibbles always one of the 1st things gone. . .
