Deep Dish Pizza Soup

Deep Dish Pizza Soup has all the flavors of pizza in a bowl that’s topped with mozzarella cheese for that ooey-gooey cheese factor! This truly is pizza in soup form. 2 tbsp olive oil, divided
1 ½ lbs Shady Brook Farms 93/7 Lean Italian Style Seasoned Ground Turkey
4 oz sliced pepperoni
16 oz package sliced mushrooms
1 onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
2 tbsp minced garlic
1 tsp red pepper flakes
6 14.5 oz cans diced tomatoes, undrained
2 14.5 oz cans chicken broth
½ cup black olives, sliced
1 ½ tbsp dried Italian seasoning
mozzarella cheese, shredded, for topping
french bread, toasted and sliced, for topping
green onions, chopped, for topping
 
Heat 1 tbsp of oil in a large skillet over medium high heat. Add turkey and cook for 5 minutes until brown.  Stirring while cooking to break up meat. Remove turkey with a slotted spoon and drain on a paper towels. Set aside.
 
In the same skillet over medium heat add pepperoni and cook for 4 minutes or until pepperoni starts to crisp. Remove pepperoni from skillet and drain on a paper towel. Set aside.
 
In a dutch oven or soup pot heat remaining 1 tbsp of oil over medium heat. Add mushrooms, onion, red bell pepper, green bell pepper, garlic and red pepper flakes. Cook for 10 minutes or until vegetables are crisp tender. Mix in diced tomatoes, broth, ground turkey, pepperoni, black olives and Italian seasoning. Bring to a boil then reduce heat. Simmer uncovered for 20 minutes, stirring occasionally.
 
Ladle soup into soup bowls. Sprinkle each with cheese and chopped green onion then top with french bread slices.
 
    Makes 12 servings.
