Creamy Turkey Taco-Night Soup

Creamy Turkey Taco-Night Soup is a hearty soup that has all the flavors of a supreme taco – cheese, delicious meat and all! This is one of those recipes that will be requested by your family over and over again. Quick and easy to prepare with Honeysuckle White Ground Turkey and kitchen pantry staples that get dinner on the table in a flash. This soup is so addictive that it’s destined to become a family favorite!

1 tbsp olive oil

1 onion, chopped

1 red bell pepper, chopped

1 celery stalk, chopped

1 garlic cloves, minced

1 1.2 lb package Honeysuckle White 93/7 Lean Ground Turkey

1 tbsp cumin

2 tsp chili powder

8 oz cream cheese, softened

1 cup cheddar cheese, shredded

2 10 oz cans diced tomatoes

1 14 oz can beef broth

tortilla strips, for topping

sour cream, for topping

cilantro, chopped, for topping

 

In a large heavy pot heat olive oil on medium heat. Add onion, bell pepper, celery and garlic. Cook for 5 minutes or until vegetables are just tender. Add in ground turkey. Cook for 5 minutes, stirring occasionally, until no pink remains. Drain and return mixture to pot over medium heat. Add in cumin and chili powder. Stir in cream cheese and cheddar cheese. Add in diced tomatoes and beef broth. Bring mixture to a boil and then reduce heat and simmer for 10 minutes.

 

Serve soup in serving bowls and top with tortilla strips, sour cream and cilantro.
